Spoiler alert but keep reading if you want to know a trick that worked for Mission 1 and Mission 2 so far. I use the Strong Swimmers option as well. Build the saw mill, query and assign 2 stone masons and 2 lumber jacks and one carpenter. Build the butcher shop and tavern and assign a cook and a butcher with 4 hunters assigned as well. Build a hospital and textile and assign a doctor. Place a barracks and once it has all the lumber and bricks it needs, build the mine and forge. Assign one of the stone masons to be a miner and one lumberjack to be a blacksmith. Build five houses and wait. If all works in your favor at this point, the barracks will get the metal bars it needs and start being stocked with suits of armor. The first two children born should be made into knights and the next two into peasants. Now build three more houses, and first things first, the first for adults from house number 6 should be as follows, peasant, knight, weaver, butcher. Build your first wheat, vegetable, and vineyard farms as well as the bakery and mill. House number the next four adults should look like this, hunter, farmer, builder, peasant. The last four should look like this, knight, weaver, butcher, hunter.
So far, doing the above has worked well for me. This is probably difficulty dependent though. So, keep that in mind.
