I get your point, I really do, and normally I would agree. Options are good, but it is never a good idea to have a specialized interface which takes away some of the functionality. Good accessibility practices tell us that it is never a good idea to have a special interface for example for blind people. If we tell google that we want to have a basic HTML view, it can be interpreted as I'm blind, give me simple HTML stuff, I don't know how to use the default one, even though it is accessible.
