Hi Chrissie,
The authors who write Star Trek and Star Wars books have permission from 
the copyright holders to do so. Often the authors are insiders of those 
copyrights anyway. For example Jerri Taylor use to write the screen 
plays for the star Trek tv show, and also put out several STNG books.
As for the ship names technically using U.S.S. Enterprise on it's own is 
not a trademark as there have been several U.S. naval ships named 
Enterprise. Most notably the U.S.S. Enterprise which was an aircraft 
carrier in World War II.
Where the problem comes in is using Enterprise as it relates to Star 
Trek, and using the official Star Trek effects. If you remove all ship 
names, and sound effects and replace them with something else then the 
game, book, movie, etc esentually is no longer Star Trek. The same goes 
for Star Wars.
There would be no way of creating a Star Wars game without having Jedi, 
Light sabers, blasters, etc. The effects for all those things are owned 
by Skywalker Sound which is a devision of  Lucasfilm Limited.
