I have also used a knife for this task and yes it does work pretty well
until you are following a speaker wire on a home system and some how end up
with the hot cord of your wifes favorite lamp in your hands and end up
cutting that instead.

Seriously though, My father and I have always used a utility knife to strip
wire.

We would lay the wire to be stripped across our thumb in a cross pattern,
then put the knife of the blade parallel to our thumb.

This would allow for a more proper gauge of how much housing we were cutting
off the wire and how deep we needed to go.

I know, it wasn't the most safest way of stripping wire, but it was fast and
pretty accurate and does what you need in a pinch.

I've never cut myself, and the biggest problem I've ever had was with
telephone wire and it's minute housing.

I had to do those with my teeth, but the utility knife worked out with every
other wire I ever had to strip.
