Since nobody else has had a whack at this, I'll pass along what I
think I know, maybe it'll generate some corrections or enhancements.

I know of no magazines offered directly in word format, but 
Bookshare
http://www.bookshare.org
has some in daisy format which can be converted to html with
software they provide.  They are a paid subscription of course
for print impaired folks, and I don't think there is anything there
in the areas you want.

Also of course the library of congress's talking book
program, I believe may have something on gardening in one of the various
talking book formats, all audio or maybe braille.  Braille can be
back translated to text, but the audio formats must be played on a talking
book complient device.

There may be some print mags that are beginning to offer electronic
subscriptions, but they'll be in PDF or some other proprietary format
which may or may not be readilly converted to word or text.

And don't anybody write back to whine at me how accessible PDF is,
you'll get a very loud and very knowledgable lecture on the inconsistancies
of that bloody mess.  Some PDF is accessible sometimes.

Basically nobody is likely to produce commercial magazines in word or any 
other easilly modified format because they can't be sure of keeping
their copyright protected and not having people distribute
modified or corrupted versions of their copyrighted materials.
