Sure. One guy on here is compiling a list of commands for the Apex
paired with an iPhone4. The beauty of iOS is that it should be the
same, so what works on an iPhone with 4.1 should work the same on an
iPod with 4.1.

Let's see if I can remember this right...
Just turn on bluetooth on the iPod and Apex, then pair them using the
bluetooth menu on the Apex.
Next, go into braille terminal on the apex, selecting bluetooth as the
connection.
Finally, open settings > general > VoiceOver on the iPod. Move down to
Braille (near the bottom, you may have to move down a page to see it).
Select it and, after a few seconds, feel around for a list of
displays. Your apex should be there. Double tap it and you should see
braille coming up on the apex while the iPod keeps talking. I
recommend going to Practice Gestures to see what braille commands do
what. Also, I think you can kill speech (2-finger double tap, I think)
but still use braille, so no need to keep headphones in the iPod all
the time.
