Basic Crusty Rolls          
Yield: 18 rolls.

Ingredients:

1/4-oz. envelope dry yeast
1 Tblsp salt
3 1/2 cups flour, plus more if needed
1 to 2 Tblsp cornmeal

Instructions:
1. Sprinkle yeast over 1/4 cup warm water (100 F-110 F) in bowl. Let stand
until the yeast dissolves, 3-4 minutes. Add 1 1/4 cups warm water, the salt
and 3 cups flour to bowl with yeast. Mix with wooden spoon to make a sticky
dough.

2. Scrape dough out onto floured board. Add sprinkles of flour as necessary.
To knead, fold dough; push down hard on it, pushing away from you, then turn
dough a quarter turn. Fold again, push, turn. Occasionally, slam dough down
hard, then continue kneading. Knead 10 minutes, adding flour as needed until
dough is smooth and elastic. Test to see if you've kneaded enough by
slapping your hand on dough, holding it there for a count of 10, then
lifting your hand up. If bits of dough cling to your hand, continue to
knead, adding flour.

3. Place dough in ungreased glass or ceramic bowl, cover with plastic wrap
(tightly over edges to contain moisture). Let rise in warm place (90 F-100
F) until double in bulk or an indent remains when you press dough near edge
with finger, 1 hour.

4. Punch dough down. Place on work surface. Form dough into dome-shaped
rolls by pulling off pieces a little bigger than a golf ball and pressing
dough into your cupped hand, pinching seams together on bottom. Place rolls
on ungreased cookie sheets that have been sprinkled with cornmeal. Cover
rolls lightly. Let rise again until doubled in size, 1 hour.

5. Heat oven to 450 F, placing small cake pan on floor of the oven to heat
as oven heats. Brush rolls with cold water. Have ready 12 ice cubes. Place
rolls in oven, then place ice in the hot pan on bottom of oven (steam will
rise immediately). Close door. Bake 23-25 minutes, until lightly browned.

Recipe note: Takes longer to rise than doughs with sugar.
