Here are a few recipes for using apples and pears APPLE PIE BREAD 1/2 cups Butter Or Margarine (butter Is Better) 1/2 cups Brown Sugar 1/2 cups Granulated Sugar 1/4 cups Sour Milk, Cream, Buttermilk (whatever) 2 teaspoons Baking Powder 2 whole Eggs 1 teaspoon Vanilla 2 cups Flour 1/2 teaspoons Sea Salt 2 cups Shredded Apples (leave The Peel On; Its Pretty) 1 cup Pecans Or Walnuts, Chopped Fine For The Topping 2 Tablespoons Butter 3 Tablespoons Flour 1/4 cups Brown Sugar 1/2 cups Walnuts Or Pecans, Chopped Preparation Instructions Preheat oven to 350 degrees. Spray loaf pan with Crisco or Pam (whatever you have works).
In a large bowl, beat butter (1/2 cup) until fluffy; add sugar and mix well. Then add milk and baking powder, again mixing well. Add eggs and vanilla; you guessed it, mixing well after this addition too. Add the flour and salt and beat well. Stir in apples and nuts. Spoon batter into pan and spread evenly. Then make the topping - combine butter (2 tablespoons) , flour (3 tablespoons) and brown sugar (1/4 cup) and the rest of the nuts, mixing well until crumbly. Then sprinkle evenly over the top of the batter. Put in oven, for 1 hour or until done. Cool on wire rack for 10 minutes or so and then remove from the pan. Cool completely, wrap and store overnight BEFORE slicing. (This does make a difference on the texture.) APPLE BANANA BREAD 1/2 c Butter, softened 1/2 c Brown Sugar 1/2 c Granulated Sugar 2 Eggs 3 tb Sour Cream 1 Banana, mashed 1 ts Vanilla 2 c Flour 1 ts Baking Powder 1 ts Baking Soda 1/2 ts Cinnamon 2 Apples, cored and chopped 1/2 c Chopped Walnuts Preheat oven to 350 deg F. Cream butter and sugars, and beat in eggs. Stir in sour cream, banana and vanilla. In separate bowl, combine flour, baking powder, soda and cinnamon. Gradually add to butter mixture. Gently stir in apples and nuts. Spoon into greased bread pan and bake 1 hour. This recipe is a yeast bread for a Bread Machine APPLE CHUNK BREAD 1 cup milk 1/4 cup vegetable oil 2 tablespoons sugar 1/2 teaspoon cinnamon 1 1/2 teaspoons salt 3 cups bread flour 2 1/2 teaspoons yeast 1 1/3 cups apple, peeled and chopped Add ingredients in order, adding apple pieces with liquid ingredients Follow directions for your machine APPLE PIE DROP COOKIES 1/2 c. butter, at room temp. 2/3 c. granulated sugar 2/3 c. packed brown sugar 1 tsp. cinnamon 1/2 tsp. baking soda 1/2 tsp. ground nutmeg 1/8 tsp. ground cloves 1 egg 2 Tbs. milk 2 c. flour 1 c. finely chopped apple (you do not have to peel) 1 c. chopped walnuts In a large mixing bowl, beat butter with mixer on medium speed and then turn on high and beat for 30 seconds. Add granulated sugar, brown sugar, cinnamon, baking soda, nutmeg, and cloves; beat until combined. Beat in egg and milk. Beat in as much flour as you mixer can handle. Stir in any remaining flour, the apple and the nuts with a wooden spoon. Drop by rounded teaspoons, 2-inches apart onto lightly greased cookie sheet. Bake at 375F for 9 to 11 minutes. Bake until edges are just lightly browned. Do not over bake. Cool on cook sheet for a minute or 2 then transfer to a wire rack and cool completely. Store in a tightly covered container for up to 3 days, or freeze for up to 3 months. BIT OF APPLE COOKIES 1/2 cup margarine 1cup brown sugar 2 eggs 11/2 cups all -purpose flour 1/2cup oatmeal 2 teaspoons Baking soda 1/2 teaspoon cinnamon 3/4 cup wheat germ 1 cup chopped apples Preheat oven to 350. Cream margarine,add sugar and eggs. Combine remaining dry ingredients and mix. Add apples. Bake for 10-15 minutes. APPLE OATMEAL COOKIES 1 cup butter, softened 1 cup packed brown sugar 1/2 cup sugar 2 eggs 1 teaspoon vanilla extract 1-1/2 cups all-purpose flour 2 teaspoons ground cinnamon 1 teaspoon baking soda 1/4 teaspoon salt 3 cups old-fashioned oats 1/2 cup chopped dried apples Directions In a large bowl, cream butter and sugars until light and fluffy. Beat in eggs and vanilla. Combine the flour, cinnamon, baking soda and salt; gradually add to creamed mixture and mix well. Stir in oats and apples. Drop by rounded tablespoonfuls 2 in. apart onto ungreased baking sheets. Bake at 350° for 10-12 minutes or until golden brown. Let stand for 1 minute before removing to wire racks. Yield: 4 dozen. We enjoy Pear Pie PEAR PIE Pre-pare a one crust pie shell. (I use a 10 inch pan) Peel and slice enough pears to fill pie shell. Mix together 3/4 cup sugar 3 Tablespoons flour Add 1 cup half & half 1 teaspoon vanilla 1 teaspoon cinnamon Mix well and pour over pears Bake at 375 F. for 45-60 min.
