10 Grain Bread Ingredients Measure Metric Day Before Bread flour 1/2 cup 120 ml Whole wheat 1/2 cup 120 ml Water 3/4 cup 180 ml 10 Grain Cereal ( Bob's Red Mill ) 3/4 cup 180 ml Instant Yeast 1/8 teaspoon .65 ml Day Of: Bread flour 4 - 4 1/2 cups 960 - 1080 ml Whole wheat 2 cups 480 ml Brown sugar ( packed ) 1/4 cup 60 ml Salt 1 1/2 teaspoon 7.5 ml Oil 2 tablespoons 30 ml Milk 1 1/4 cup 300 ml Water 1 1/2 cups 350 ml Instant yeast 1 tablespoon 15 ml Egg white 1 1 Directions
Mix all the "day before" ingredients together and cover with plastic wrap and allow to sit for 12 - 16 hours or over night. The next day heat the water and milk to a scald. Pour into a large bowl and add the brown sugar, oil and salt. Mix together till the sugar has desolved. Allow to cool to 110F or 40C before you add in the "day before" mixture and the whole whaet flour. Mix til smooth. Add in a cup or 250ml of flour and the instant yeast. Mix till smooth. Continue to add flour till it becomes to hard to mix in the bowl. Add some of the flour to a flat surface and pour out the dough. Add a little more of the flour on top. Begin to knead and continue to add in more flour. Knead the dough - you may need to use a dough scraper if the dough sticks to the counter. You want the dough to be a little on the sticky side. So, only use enough flour to allow easy kneading. Knead for about 15 minutes. Place into a lightly greased bowl and turn over a few times to lightly coat all sides of the dough. Cover with plastic wrap and allow to rest till double in size ( about 1 hour ). Pour ot the dough onto a flat surface and cut into 4 equal pieces. Press down on the dough to release the gas from the dough. Roll each piese into a ball and place 2 of the pieces into a lightly greased large loaf pan. Do the same with the other 2 pieces. Cover with plastic wrap and allow to rest till double in size ( about 1 hour ). Take your egg white and whip it with a whisk till foamy. Brush the tops of the dough and sprinkle a little of the 10 grain cereal on top. Place into a preheated 375F or 190C oven for about 30 - 35 minutes and the top of the bread is a golded color.
