That would be "Real Ale" casks. As you noticed, no CO2 at all, but
proper English hand pumps, or a tap straight out of the cask. Sweet and
simple.

The drawback is of course that without CO2, they have to let ordinary
air into the cask when beer is let out, and that starts to oxidize the
beer. This means that a cask has to be emptied within a few days of
opening it, or the rest be thrown out.

Also, the lack of extra CO2 makes this form limits the amount of head
and bubbles in the beer, which is fine for English style Ales, but might
not suit a weizen or a pilsner.
