Depends what you want to do. If you have extracted the wort, and have planned to use the spent grains for something else, you can probably store them in a fridge for a few days. If you plan to start your mashing one day, close down, and continue the next day, I would certainly do the sparging the first day, dump the grains, and keep the wort overnight. As it will be boiled, it should be relatively harmless for a day or maybe two. But watch out, the malt carries a lot of sour bacteria! I have actually used this for making a bit acidic porter, by simply leaving the mash at room temperature overnight.
