I don't see how it would go bad at all. I'd keep it in another plastic
bag or some other container, in a dark and dry place. Can't see how it
would go bad at all. Maybe it absorbs a bit of humidity from the air,
and thus gets a bit heavier and clumpier. It may also loose a bit of
its good taste... So you may want to use 2% more than prescribed, if you
work with so much precision.
