En lille kommentar med på vejen. Jeg bryggede for et par måneder siden en belgisk dubbel. Opskriften angav humle med 5% alpha. Da den humle jeg havde på lager (samme type som opskriften) var 2.9% justerede jeg proportionalt. Dette går også godt men kun i begrænset omfang grundet andre "substanser" i humlen, som man ikke nødvendigvis ønsker i højere koncentration.
Jeg spurgte Brouwland til råds idet det var her jeg havde købt humlen se svaret nedenfor "Dear mister Sandager, Last year harvest of the most of the hop varieties turned out to be at low alpha acids. You will find that nearly all of the alpha acids are lower this season. So also the Styrian Golding. All the amounts of alpha acids are given to us by the laboratory of the manufacturer, so we must believe that these are correct. Of course, by doubling the amount of hops to be added to your beer, you also double the taste of harshness into your beer. The bitternes will be correct (from the alpha acids then) but all other flavours into the hops will also be doubled, and probably these give you a negative impression. What we recommend to do, is that you can raise the amount of hops in order to correct bitterness, but not by doubling it. Instead of doing that make use of bitter hops or by correcting the beer after fermentation with isomerised hop extract. Now for correcting your beer: best solution is to brew another beer and mix it during first fermentation with the other one. Difficulty of course is to correct the bitterness. As mentioned above, make use in this second brew of a very strong bitter hops (such as MAGNUM 13%), or if you are willing to do so add hop extract just before bottling.
