Somewhere on that site I noticed a mention of beercalc, so they are not totally ignorant of us. And yes, they repeat the 55-60 degrees a few places, but as far as I could read, they had produced some beer, so something they must do right. Has anyone here actually tried such a cool and long mash? Even if it is not at the ideal temperature for those enzymes, they may still get enough done... After all, in the nature they do their work in much colder environments. Personally I feel that if I want coffee in my beer, I take it from coffee, as in a coffee stout. But if they think their gua-whatever is more fashionable, then by all means let them try.
