Well, copper has been used in traditional brewing for a really long time, and I haven't heard of anyone dying of it. Anyway, they say that the yeast needs some trace amounts of copper for effective reprouction, so I assume it will eat most of it. Then it settles down to the bottom of your bucket, and you leave the yeast and copper behind when you bottle.
