Actually, I need to add some (almost?) boiling water in the middle of a
longer mash too, to keep the temperature up. At then end of the mash I add
(almost?) boiling water for mash-out and/or sparging - for me those are
pretty much the same thing. Around the same time I start to circulate wort,
and as soon as it runs reasonably clear, I start to collect it in my pot.
At the same time I sparge with mroe hot water, and once I have used up what I
heated in my pots, I heat more water on a small electric kettle, and add that
when it boils. That is so little that I can hardly keep the temperature up.
