Older versions of Grub Loader had an option for a text-only interface, which
was clearly visible, but the newer versions do not seem to have that option.
I thought that perhaps altering the colours in menu.lst might be a way to fix
it.

It seems that you have a version of Grub with splashimage patch.
Please check the commands background and foreground which change colours.
