You have probably stumbled across a problem that default color in ubuntu
is black on transparent which isn't usable if backgroung image fails to
load. Do:
sudo chmod -x /etc/grub.d/05_debian_theme
sudo update-grub
If it doesn't help it means then note that "GRUB " is shown very early
on startup and it not being showed usually indicates a problem with BIOS
configuration
