There is currently no way to manually set `root` without editing
/boot/grub/grub.cfg every time the config updates, making maintaining a
cryptfs system a long task. Ideally, grub would realize that if a cryptfs
is set, it changes `root=UUID=...` to `root=/dev/mapper/...`
