Guile2 never was robust enough to build any significant amount of
LilyPond code so there is little surprise that it does not build the
documentation.

If it fails at the same place over and over, it might be worth
investigating.  I consider it more likely that it crashes at a different
place every time.

The documentation is complex, and LilyPond does not work on complex
scores using Guile2.  It's not more than proof-of-concept quality right
now.
