I don't think that this would be very easy to do 
for a couple of reasons.

1. the 'redhat' thing is actually a hack/patch to the code by redhat
2. we (apache core) have zero control over what the module developers add to 
the 
   server tokens, at the moment they are doing it modulename/version but there 
is
   nothing saying that they have to, (eg.. mod_ssl actually adds the mod_ssl 
tag as 
   well as the openssl)

The -MinorVersion thing I think is good idea (so that is says Apache/2.0) I'll
see if I can get that into 2.0.41.

but please remember that most recent kidde hacks are blind, and don't look at
the server header at all, so playing with it won't stop them
