I managed to get configure working by installing freetype via XQuartz and forcing it to be found with ./configure --with-freetype=/opt/X11
I'm building on OS X 10.11.2. The table in Appendix C: Build Environments or the README-builds.html file says "Xcode 6.3 or newer", but Xcode 7 resulted in a couple build errors*. Other sections of README-build.html say only "Xcode 6.3" and "Be sure to use the right Xcode". So I installed the command line tools for 6.3.2 and that cleared up the 2 compile errors I got with Xcode 7.
