Sorry that you had to go through gyrations to figure out how to mirror.  
With ZFS mirroring can be enabled later and this is the approach we are 
taking for the installs with LiveCD.

To mirror the zpool you need to use zpool attach
The  command is:
zpool attach [-f] pool device new_device

So first find out the existing device on the system by running zpool status
In my case it's
>     NAME        STATE     READ WRITE CKSUM
>     rpool       ONLINE       0     0     0
>       c5t0d0s0  ONLINE       0     0     0
>
Now if I wanted to mirror another disk (say c1t0d0s0) I would utter the 
following command
zpool attach -f rpool c5t0d0s0 c1t0d0s0

Resilvering would start immediately.

Yes you should expect to see more features soon. We are looking at some 
of these as part of support for extended partitions.  However we don't 
plan of supporting (solaris slice level partitioning).  Gparted was 
added in build 125 and you will be able to use it for resizing and 
partitioning a disk in the future.
