If you want to emulate the results of a findAll( ) call using query( ), set DEBUG to 2 in app/config/core.php, and use the SQL output as the basis for your custom query. Keep in mind, however, that there is next to nothing that findAll can't cover, so chances are, whatever query you're doing manually doesn't really need to be.
