It answers my first question.

and for my second question; I found the answer myself.

Yes we can use multiple tables within one class by passing the
tablename in the variable $useTable like:
var $useTable = 'employee_function_levels';
So before processing any data we can pass the name of the table to be
used in this variable and cake automatically processes data for that
table.
