`finderQuery` is there for when cake's automagic doesn't suit your needs, and you want to do everything yourself. So you can't just 'set $conditions in findAll' because you're explicitly telling cake that you don't want that to happen.
If you want help with a solution for your specific problem, try pasting some code - what is your finderQuery, for example? There is no "one size fits-all" for this, you'll have to get specific.
