I'm a big fan of slicehost because of their support and wonderful community, it really saved me when I was learning server setup/admin. The prices seem fine though maybe you can get something slightly cheaper somewhere else. At this point I'm being loyal and I also believe that the environment they've created for developers is still going to be beneficial to me, even if it isn't just in a "how do I install LAMP" kind of way.
I use postgresql, nginx and msmtp as an mta with a neat python script that queues and sends mails through the gmail account. This is because msmtp doesn't support asynchronous sending like others, and it was a fun way to learn some python scripting. Even with this non standard setup, there are a bunch of HOWTOs and tutorials around that make it pretty easy. In the end you'll have a more intimate knowledge of your server and a better overall understanding of performance and other critical factors, which is great I think.
