I've been asked to make a graduation cake for a dear friend and I need a
reliable large batch carrot cake recipe. They want a 12x18, which I would
normally just mix up 3 boxes of cake mix and bake. Then split and fill. But
because carrot cake is more dense (and a nightmare to split), I hesitate to
just triple my regular recipe and expect great results. Does anyone have a
tried and true carrot cake recipe that you have used for larger cakes?
