It's possible you're baking
it too long.  Try setting 
the timer for about 10 minutes 
less than usual, and start 
testing for done-ness then 
(with a toothpick).  

Your oven also may be too hot
despite the temperature you 
set it for.  Try getting an 
oven thermometer (from the 
grocery or hardware store) 
and test the temperature of 
your oven.
