LOVELIGHT MAPLE NUT CAKE

2 eggs, separated
1/2 c. sugar
2 1/4 c. sifted flour
3 tsp. baking powder
1 tsp. salt
1 c. brown sugar, packed
1/3 c. cooking oil
1 c. milk
1 tsp. maple flavoring
1/2 c. finely chopped walnut
or pecans

Heat oven to 350 degrees. Grease well and dust with flour 2
layer pans, 8 x 1 1/2-inches or 9 x 1 1/2-inches deep or an
oblong pan 13 x 9 x 2-inches. Beat egg whites until fluffy.
Gradually beat in sugar. Beat until very stiff and glossy.
Sift flour, baking powder and salt into another bowl. Add
brown sugar, oil and half of milk. Beat 1 minute adding
remaining milk, egg yolks and flavoring. Beat 1 more minute.
Fold in meringue. Fold in nuts. Pour into prepared pans.
Bake layers 30 to 35 minutes, oblong 40 to 50 minutes. Cool
and frost with Maple Butter Frosting.

Maple Butter Frosting:
1/3 c. butter
3 c. confectioners sugar
1/2 c. maple syrup
Blend butter and sugar. Stir in syrup until smooth. If
too thick, add more syrup until of right consistency to spread
on the cake. Sprinkle nuts on top.
