OLD FASHION MOLASSES CAKE

2 c. sugar
1 c. buttermilk
1/4 c. margarine
3 c. flour (plain)
1 tsp. salt
2 c. molasses
1 tsp. baking soda
2 eggs
spices (optional)

Dissolve baking soda in buttermilk. Cream margarine and
sugar, add eggs and beat until foamy; add molasses and salt;
if using spices, add those at this time. Stir in flour (if
self-rising omit salt). If dough is not stiff enough, add more
flour. Grease and flour one large tube pan or 2 large loaf
pans and bake at 350 degrees. Tube pan at 1 hour and 15 minutes.
Loaf pans at 50 to 60 minutes or until toothpick inserted into
center comes out clean. Stir in the buttermilk and soda
mixture after you add the molasses. Good cold but better hot
with butter.
