COCONUT BUTTER CAKE2 c. sugar1 c. butter, room temperature4 eggs2 c. flour1 
tsp. soda1/2 tsp. salt1 c. buttermilk1 tbsp. vanillaPreheat oven to 325 
degrees. Cream sugar and butter.Separate egg whites from yolks. Beat yolks and 
add to sugarmixture, mix flour, soda and salt. Add alternately, butter,milk and 
vanilla, which have been mixed. Beat egg whitesuntil stiff, fold into cake 
mixture. Bake in two 9 inchpans. Bake 35-40 minutes.ICING:1/4 c. butter1 (8 
oz.) pkg. cream cheese1 tbsp. vanilla1 lb. box powdered sugar1 tbsp. creamCream 
butter and cream cheese, add powdered sugar, mix well.Spread on top and sides. 
Put coconut on top and sides.
