Coconut buttermilk cake 1 cup shortening 3 cups flour 3 cups sugar 5-6 eggs 1 tsp. butter extract 1/4 tsp. soda dissolved in 1 tsp. hot water 1 tsp. salt 1 tsp. baking powder 1 cup buttermilk 1 tbsp. vanilla 1 can angel flake coconut
Cream sugar and shortening. Add salt, eggs, one at a time, and then add soda that has been dissolved in hot water. Add flour, alternately with milk. Add both extract and coconut. Bake in bundt pan for 30 minutes at 350 degrees or 45 minutes at 425 degrees. Glaze while hot. Glaze.....Mix 1/2 box powdered sugar with 1/2 can frozen orange juice (12 oz. size) or 1 can of 6 oz.
