First Prize

FRESH APPLE CAKE

2 cups sugar
1 cup oil
2 eggs
2 1/4 cups flour
1 t. vanilla
1/2 t. salt
2 cups chopped apples (peeled)
11/2 t. soda
1 t. nutmeg
1/2 t. allspice
1/2 t. cloves
1 t. cinnamon
1 cup buttermilk
1 cup English walnuts (optional)

Cream sugar, oil and eggs together. Sift dry ingredients.
Add all at once with buttermilk and vanilla. Combine well, stir in walnuts 
and apples.

Place in 3 cake pans which have been greased and floured.

Bake in 350 degrees oven 35 to 40 minutes. When cooled spread filling 
between layers and frost with seafoam icing.

FILLING
1 t. cornstarch
2/3 cup evaporated milk
2/3 cup sugar
2 egg yolks
1/3 cup margarine
1 t. vanilla
1/2 cup nuts

Cook until thickened about 12 minutes. Add one cup , coconut (Optional), 
nuts and vanilla. Spread between layers.

SEAFOAM ICING

2 egg whites
1 1/2 cups brown sugar (packed)
1/3 cup cold water
1/2 t. cream of tartar or 2 T.corn  syrup
1 t. vanilla

Beat over hot water until it forms soft peaks. Take out of water ... add 
vanilla and beat until firm. Frost top and sides of cake.
