Lemon Ice Box Pie 3 eggs, separated 1 1/4 cups graham cracker crumbs 1/4 teaspoon cream of tartar 1 can sweetened condensed milk 1/2 cup lemon juice (juice of 3 lemons or so) 1 tablespoon lemon zest optional 9 tablespoons sugar 1/3 cup margarine Preheat oven to 350° . Melt margarine. Mix together graham cracker crumbs, melted margarine, and 3 tablespoons of sugar. Press into 9-inch pie plate. Mix together lemon juice, lemon zest, and Sweetened and Condensed milk. Beat in egg yolks. Pour into crust. Beat egg whites with cream of tartar until frothy. Gradually beat in remaining 6 tablespoons of sugar. Beat until stiff and glossy.
