At the wake, the man's son, Bart Gorman, Jr., and grandson, Bart Gorman III, were greeting the mourners. John introduced himself to both men and said, "Please accept my sympathy. There'll never be another Bart Gorman."

Meat and Poultry:
Chicken and Mushroom Quesadillas

from Cooking by the Boot Straps...
A Taste of Oklahoma Heaven


INGREDIENTS:
1/4 cup (1/2 stick) butter
1-1/2 teaspoons chili powder
2 garlic cloves, minced
1 teaspoon oregano
4 ounces fresh shitake mushrooms, stems removed, sliced
4 ounces button mushrooms, sliced
1-1/2 cups shredded cooked chicken
2/3 cup finely chopped onion
1/3 cup chopped fresh cilantro
2-1/2 cups shredded Monterey Jack cheese
  Salt and pepper to taste
16 (5-inch) corn tortillas
  Olive oil
TO PREPARE:
 
     Heat the butter in a large skillet over medium-high heat.  Stir in the chili powder, garlic and oregano.  Saute for 1 minute or until fragrant.  Stir in the mushrooms.  Saute for 10 minutes or until the mushrooms are tender.  Remove from heat.  Add the chicken, onion and cilantro and mix well.
     Cool for 10 minutes.  Stir in the cheese, salt and pepper.  May be prepared to this point up to 8 hours in advance and stored, covered, in the refrigerator.
     Brush 1 side of 8 tortillas with olive oil.  Arrange the tortillas oil side down on a baking sheet.  Spread the chicken mixture evenly over the tortillas.  Top with the remaining 8 tortillas and brush the tops with olive oil.
     Arrange the quesadillas on the grill rack.  Grill over medium heat for 3 minutes per side or until heated through and golden brown, turning once.  Cut into wedges and serve with your favorite toppings.
