At the risk of being bettered by others could I suggest that it refers to the
'cant of the screw' which means the natural tendency of a boat to steer in one
direction or the other dependant on the design of the prop. Thus a boat which
has a tendency to turn to the left in forwards gear will tend to steer to the
right in reverse - not very much granted and most of us will use the tiller to
counterbalance the effect without thinking. However someone who knows his boat
well could use the cant to assist at a bend without apparently steering.
Stand by for some far more technical explanations!
