So, I just put together the attached simplified simulation in Gnu Radio. Which has 9 antenna inputs at 250ksps, having complex weights on each antenna input, followed by a 1024-bin FFT which is integrated and decimated down to 1 second updates.

It consumes about 10% of my lowly 8-year-old laptop for 9 inputs. My guess is that if you could get all your samples coherently into a modern-but-not-expensive PC server-grade computer, you can do whatever beamforming you want at those sample rates, and perhaps
  even use Gnu Radio to do it.
