Lance,
     I'm not going to be much help: my boat already had a sink in the head, but 
I did replace the countertop (nasty fake teak to shiny white faminate) and I 
replaced the faucet at the same time.  There's a pic of the final product in

     I can't remember the brand of faucet but I got it at West Marine.  I'm not 
crazy about the "non-traditional" look, but, I like it's 3-way capabilites.  It 
can be plumbed to accept a pressurized shore hookup, or to a 12v pump, or, it 
can be hand-pumped.  So, all your bases are covered.
