I too experienced high CPU utilization and sluggish application performance when I tried running all the Apps on one server so I setup an second server and used two Vmware servers instead of one .
I did notice a remarkable difference in performance between two somewhat identical servers with same memory size but different memory configuration and type..... if your server performance seems to be below par, you may want to first check your memory and memory banks assignment to ensure that you don't have a sub-optimal configuration.
