A great document to get started with is found here -
http://www.cisco.com/en/US/products/hw/switches/ps5023/tsd_products_support_
series_home.html

If that link doesn't work for some reason, you can access through the Doc CD
- Switches > LAN Switches - Access > Cisco Catalyst 3750 Series Switches.
Under Most Requested Documents you will see a "Cisco Catalyst 3750 Qos
Configuration Examples".

There was also a blog post on the IPX CCIE Blog that did a good job of
breaking down how it all works internally, however I don't have that link
handy. If anyone else does, it would be very helpful to get started.
