Oh yeah I forgot to answer one of the questions. Yes I have changed my strategy since my previous (2) attempts.

Here is what I am practicing:
After infrastructure is configured and working, go ahead and get QoS out of the way. No need to have that ugly monster bite me in my ass later in the day. From there focus on knocking out as much as I can in my IOS devices, with the exception of a completed dial-plan. You've taken the lab twice now, I am sure there are some things that you know that you can expect. Configure some of those things in notepad before you ever touch a device or open the lab book. No need to waste time on those things, get over with quickly. Once I move to servers, I know the top-down, left to right approach is famous however I have been doing some things such as building place holders for things that I am not ready to configure yet, before doing the top-down, left to right thing. I know that my device pools will hold certain information so I build those placeholders first so that I won't have to go back and dilly-dally with that stuff.

One of the things that has been helping me is I am learning how to slow things down mentally. Deep breaths have been working wonders for me.
