No doubt I will also plug LaTeX and GNU in general ;-}.  I only wish
that more of the crystallography journals accepted .tex format.  Does
anyone know which journals do?

For one journal, which shall remain nameless, I was required to
reformat my documents into wrd.  It was a big pain, but OpenOffice
worked for this.  It can edit word, powerpoint, excel, and many other 
formats, and it is available with all major free software distributions.

For crystallography, obviously stick with *nix.
