I would think a solution potassium nitrate in deionized water would have a negligible effect on the pH of a buffered crystallization solution. I wouldn't bother trying to adjust the pH, because the solution is not sufficiently buffered, and depending on the ionic strength of the solution, may not have sufficient conductivity to allow a pH electrode to work properly.
