The iso image contains both joliet and rock ridge extensions. M$ is unable to read rockridge, Linux will use rockridge in preference, then joliet. If you tell Linux not to use the rock ridge info, it falls back to joliet. What the mkisofs -hide options do is omit an entry for the respective rockridge/joliet data, hence your file "disappears". You should get an even more interesting look at the contents if you mount with -onorock,nojoliet. You can do this all on the iso image with the loop device.
