I noticed this issue as well, let me look and workout exactly why that happened. More info on this shortly, but on bugs.centos.org

Why did it remove my perfectly functioning install kernel?
How can I stop it from doing this?

This is behaviuor in yum. Fixed in next yum release, which is due out in a few days.
