My own experience is very limited, but I have heard from a handful of reliable sources who are very happy with ZFS. As Digimer noted, much of the challenge is in the licensing, not a technical issue. ZFS has been packaged for RHEL/CentOS: http://zfsonlinux.org/epel.html So it should be fairly straightforward to get things working.
