You get the old ones like sticking down the pins on his phone, so when
he picks it up nothing happens

More "evil" is the thumb-tack in the chair, point upwards... obvious results

Switching around the keys on his keyboard, unless he's a touch typist :P

Select a completely different language for his keyboard (French is always fun)

Depending on his location to somebody else - run his monitor cable
through a KVM/monitor box, so that you can turn off his monitor, or
switch it to somebody else's display
