A lot of it is the atmosphere, we'll usually tour the cellars and you learn something about the history of the winery. The vintners are *usually* a lot of fun, although some can be snooty. It's a fun time especially if you can fit a few in per day. Most wineries have events, one of our favorites, Horton Winery does a Mardi Gras Festival every year.
