two possibilities.

1. I use XMail:

http://www.xmailserver.org/

It is a free, open-source mail server that runs on Windows, *nix. It has
POP3, SMTP, and Finger support. It has good community support and a plugin
architecture that allows you to use Spamassassin, virus scanning, and lots
of other little goodies. It takes a little time to get familiar with the
text file configuration, but it has free tools for configuration and
administration, too. Supports unlimited email addresses and domains. Rock
solid mail server.

2. If you need IMAP (server-basded mail) and webmail, try SME Server:

http://www.smeserver.org/

It is a free Linux distro that installs in a flash on any standard PC
hardware. It has loads of features, although by default it limits you to one
email account per user and the users are tied to the server login. That
becomes important if you serve multiple domains with your mail server,
because it doesn't really support that well by default. There is a guy that
sells a commercial upgrade to SME Server that provides full multi-domain
email support, but I haven't used it.

The best part about SME Server is that it acts as a file server and has
community contributions for lots of extra features. I added Jinzora media
server, eGroupware, and Horde webmail to mine with a bit of extra effort. It
also auto-generates SSL certs for the web interface, which is dead useful.
Very cool.
